Hello and Happy Friday. Today I’m sharing an old favorite that I was reminded of this week while visiting Charleston, S.C. My daughter and I flew down for a quick 3-day trip for her college orientation and were able to sneak in a few really memorable meals while we were there. I guess it won’t surprise anyone that food is one of my favorite aspects of traveling. Trying new restaurants, eating where the locals eat - I absolutely love it and I always find inspiration to bring home from those experiences. The food scene in Charleston is incredible and I can’t wait to go back in August to sample even more of the city’s offerings.
We had some great food and plenty of seafood, but the best meal we had was at the Obstinate Daughter on Sullivan’s Island and shockingly no seafood was involved (and I’m a seafood lover). After a very busy two days of orientation we were determined to dip our toes in the ocean before flying back home so we made the 20 minute trip out there on our last night. After a quick dip and walk along the beach we walked a couple blocks to the restaurant and were happy to find patio seating since we were fresh off the beach. The restaurant has a real farm-to-table focus and we started with a big shared salad composed of local greens and a buttermilk vinaigrette. It was simple, fresh, and beautiful and I couldn’t stop eating it. For dinner my daughter had the Radiatore alla Vodka and I had the Just Peachy Pizza. It was a seasonal item and I felt like I just had to have it after our server described it. It was a thin crust pizza topped with onion jam, gorgonzola cheese, thinly sliced local peaches, prosciutto, and vin cotto. It was so delicious - mostly very savory with a hint of sweet from the peaches and onion jam but not too much sweetness. I raved about it to my pizza loving husband and we’re already planning to recreate it this weekend on our weekly Saturday pizza night. It gave the same sweet and savory balance as my Fig and Prosciutto Pizza - which was also inspired by a pizza my husband had at one of our favorite spots in Avon, N.C. I haven’t made that one in a while but it’s a favorite around here and I’m glad this restaurant experience brought it to the front of my mind.

Or… use my Sourdough Discard Focaccia as the base for a fun and fluffy variation. I’m thinking of adding a Just Peachy inspired focaccia variation before peach season slips away.
